They're trained to be cold and calculating. The thing about it is, though, that he's still got the training and he's still a Witcher. It's implied that Geralt is a special case, where alot of his emotions are actually still intact despite the mutations. So, he underwent extra mutations that most others can't endure. The only side effect he actually had early on was when his hair turned white, but that was it.

But, Geralt is different because his body took exceptionally well to the mutations. Witchers have nearly all emotions eradicated from them because of the mutations and the training they undergo since childhood.

He tries, but he usually chooses a side and does feel things. Because he's a Witcher, Geralt tries not to care, and tries to be neutral with most things. Geralt is kind of a contradiction, actually. Well, he's pretty much the same in the novels. I'm not saying he lacks empathy or the capacity to love, it's just that he's the sense that he struggles to show much in the way of excitement or anger, like you mentioned. So he tries to be brief and show his point with few words, that's why he talks like that.
#Witcher 3 wanna talk to menge or hands off full
His personal story is full of tragedy and accidents too, so he wakes up everyday thinking of the Wild Hunt problems and what not. I dunno, he's quiet, doesn't get phased by much, and he's disappointed with the world and how evil every non-peasant is. He has emotions and also the ability to briefly yet successfully express himself and hit where it hurts (verbally). I dunno why this is how some people are mis-interpreting his personality! He loves Yennefer and Ciri, he cares for his friends, his sense of justice overcomes his tendency to be a neutral monster-slayer so often that the critiquing cynicism drips from his words when he stands before tyrants and criminals. My guess is that verbal communication isn't his strongest suit and the devs wanted him to be like that despite the fact that he talks to everyone. He's supposed to sound emotionless from what I can tell.
